The cuisine is focussed on locally sourced ingredients. Daniel and Stefano source authentic Val di Non products: vegetables grown by Fabrizio in his kitchen garden, Trentino cheese from the Consorzio Produttori Agricoli di Rumo farmer’s association and the Caseificio Presenella di Mezzana dairy, certified beef from the Macelleria Anselmi butcher’s shop in Samoclevo, organic flour from Molino Pezzini in Sarnonico, craft beers from the BirraFon brewery in Fondo and Groppello wine from the Cantina El Zeremia in Revò.
